You have probably realized I have a thing for Chocolate. These are my current addiction.
They are gooey, moist and full of chocolatey goodness. I dust them with raw cacao as I like the slight bitterness on the surface while I bite into the sweet centre.
I served these 2 ways. The first time was with a batch of banana and coconut ice-cream and the second as a nod to valentines day cut into hearts with coconut cream and raspberries. Both were incredible!
2 cups cooked orange sweet potato
1 cup almond meal
16 soaked dates, pips removed
½ cup coconut flour
¾ cup arrowroot flour
1 cup raw cacao
Pinch sea salt
¼ cup coconut nectar or sweetener of choice
1/3 cup water
Place all the ingredients in a blender, puree till smooth.
Tip into a lined baking tray, approx. 35cm square
Bake at 40-45 minutes on 180 degrees, or until a skewer comes out clean.
COOL!!!!! Before removing from the tray.
P.S the ice-cream was 2 frozen bananas and 1/4 cup of coconut cream in my Thermomix on high for around 45seconds to a minute.
